Ingredients for Homemade Taco Bell Enchirito
For the Meat Filling
- 1 pound ground beef
- 1 packet taco seasoning (or homemade)
- ½ cup water
For the Rest
- 1 cup refried beans
- ½ cup finely diced white onion
- 6–8 soft flour tortillas
- 1½–2 cups red enchilada sauce
- 1½ cups shredded cheddar or Mexican-blend cheese
- 1 small can sliced black olives, drained
Making the Seasoned Beef
The beef is the foundation of the Enchirito flavor.
Step 1: Brown the Beef
Cook ground beef in a skillet over medium heat until fully browned. Break it apart as it cooks. Drain excess grease.
Step 2: Add Seasoning
Add taco seasoning and water. Simmer for 5–7 minutes, stirring occasionally, until thickened.
The beef should be savory, slightly salty, and mildly spiced—just like Taco Bell’s.
Preparing the Refried Beans
Warm refried beans until smooth and spreadable. If they’re too thick, add a tablespoon or two of water.
Warm beans make rolling the tortilla much easier and improve texture.
Assembling the Enchirito
Step 1: Warm the Tortillas
Heat tortillas briefly in a skillet or microwave until soft and flexible.
Step 2: Fill the Tortillas
Lay a tortilla flat and add:
- 2–3 tablespoons refried beans
- A generous scoop of seasoned beef
- A sprinkle of diced onion
Step 3: Roll
Fold the sides inward and roll tightly like a burrito.
Repeat with remaining tortillas.
Smothering the Enchiritos
Step 1: Arrange in a Baking Dish
Place rolled tortillas seam-side down in a lightly greased baking dish.
Step 2: Add Sauce
Pour enchilada sauce over the top, making sure each Enchirito is well covered.
Step 3: Add Cheese and Olives
Sprinkle shredded cheese evenly over the sauce, then top with sliced black olives.
Baking Instructions
Preheat oven to 375°F (190°C).
Bake uncovered for 20–25 minutes, or until:
- Cheese is fully melted
- Sauce is bubbling
- Edges are lightly golden
Let rest for 5 minutes before serving.
