Full Recipe: Classic Golumpki Soup
Ingredients (Serves 6–8)
- 1½ pounds ground beef (or beef/pork mix)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 small head green cabbage, chopped
- 1 cup uncooked white rice
- 1 (28-oz) can crushed tomatoes
- 1 (15-oz) can tomato sauce
- 6 cups beef broth
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 bay leaf
- 1 tablespoon sugar (optional, to balance acidity)
- Fresh parsley for garnish (optional)
Instructions
Step 1: Brown the Meat
Heat olive oil in a large pot or Dutch oven over medium heat. Add ground meat and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
Step 2: Add Onion and Garlic
Stir in diced onion and cook for 4–5 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
Step 3: Add Cabbage
Add chopped cabbage and stir well. Cook for 3–4 minutes until it begins to wilt.
Step 4: Build the Soup
Pour in crushed tomatoes, tomato sauce, and beef broth. Stir to combine.
Step 5: Add Rice and Seasoning
Add uncooked rice, paprika, salt, pepper, bay leaf, and sugar if using.
Step 6: Simmer
Bring to a gentle boil, then reduce heat to low. Cover and simmer for 35–40 minutes, stirring occasionally, until rice is tender and cabbage is soft.
Step 7: Serve
Remove bay leaf. Taste and adjust seasoning. Garnish with parsley if desired.
Serve hot with crusty bread or rye rolls.
