Instructions

Step 1: Prepare the Ingredients

Wash and chop all vegetables into similar-sized pieces to ensure even cooking.

Step 2: Optional Browning

Heat olive oil in a skillet and lightly brown the chicken for extra flavor. This step is optional but recommended.

Step 3: Layer the Slow Cooker

Add potatoes to the bottom, followed by carrots, celery, onion, and garlic. Place chicken on top.

Step 4: Season and Add Liquid

Sprinkle herbs and spices evenly. Add bay leaf. Pour chicken broth over everything.

Step 5: Cook Low and Slow

  • Low: 7–8 hours
  • High: 4–5 hours

Avoid opening the lid frequently.

Step 6: Shred or Chop Chicken

Once cooked, remove chicken, shred or chop, and return it to the stew.

Step 7: Thicken (Optional)

Mix flour or cornstarch with water and stir in. Cook 15–20 more minutes until thickened.
