Old-Fashioned Coconut & Fruit Cake

Ingredients

 

The Dry Mix:

  • 1 ½ cups Self-raising flour (sifted)

  • 1 cup Desiccated coconut (unsweetened)

  • 1 cup Granulated sugar

  • 1 ½ cups Mixed dried fruit (raisins, sultanas, cranberries, and chopped glacé cherries)

The Wet Mix:

  • 125g (approx ½ cup) Butter, melted and cooled

  • 2 Large eggs, lightly beaten

  • ½ cup Whole milk

  • 1 tsp Vanilla extract
