Step-by-Step: Making Vegan Garlic & Herb Focaccia
Step 1: Mix the Dough
In a large bowl, combine:
- Warm water
- Yeast
- Olive oil
Stir gently, then add flour and salt. Mix until a shaggy dough forms.
At this stage, the dough will look rough and sticky—that’s normal.
Step 2: First Rise (Bulk Fermentation)
Cover the bowl and let the dough rise for 1–2 hours at room temperature, or until doubled in size.
For deeper flavor, you can refrigerate the dough overnight and bake it the next day.
Step 3: Stretch and Fold (Optional but Recommended)
Instead of kneading, perform gentle stretch-and-folds:
- Pull one side of the dough up and fold it over
- Rotate the bowl and repeat
This strengthens the dough while keeping it airy.
